Chicken & Bean Stew

Serves: 2

You will need

1 tbsp oil
330g pack chicken 
breast chunks
1 carrot, sliced 
1 leek, sliced
350g tomato soup
400g can cannellini beans, drained and rinsed
2 tbsp chopped parsley



Directions

1 Heat the oil and fry the chicken, carrot and leek for 5 minutes. Add the soup and cannellini beans, cover and cook for 5 minutes, or until the chicken is cooked throughout with no pink meat.

2 Stir in the parsley and serve immediately.
