4 x Sweet Potatoes
150g Primula Cheese
For the Dressing
50ml white wine finger
½ lemon, juiced
1 handful of parsley, roughly chopped
2 garlic cloves, minced
1 tbsp. olive oil
½ chilli, finely chopped
1 Place four sweet potatoes in the microwave and heat at 600w for two minutes.
2 Slice sweet potato into ¼“ slices.
3 Brush lightly with olive oil and place on grill. Cook for five minutes on each side.
4 Meanwhile, place all the dressing ingredients into a sealed jar. Shake well before serving.
5 Remove sweet potato from the grill and top with melty Primula Cheese and dressing.
Best served warm.
