3 courgette slices
¼ red pepper
1 thick slice of Spelt Bread
1 tbsp olive oil
1 Pre- heat the oven.
2 Slice the courgette thinly and cut the red pepper into chunks. Put the vegetables onto a skillet or under the grill for 3-4 minutes until they start to colour, turn them over, cook the other side then remove from the heat.
3 Take a thick slice of bread and press the feta onto it.
4 Lay the prepared courgette and red pepper over the feta.
5 Transfer the sandwich to a baking tray and drizzle the oil over the top.
6 Bake for 8–10 minutes.
