Avocado and Feta on Sourdough Toast

You will need

12 slices of sourdough baguette
2 tbsp extra virgin olive oil, plus extra for serving
4 ripe avocados
150g feta cheese, cut into crumbly chunks
Basil leaves
Freshly ground black pepper


1 Heat the oven to180°C/160°C fan/Gas Mark 4. Meanwhile, line a baking tray with a sheet of non-stick baking paper.

2 Place the baguette slices on the baking tray and drizzle with oil. Bake for about 10 minutes, until crisp. Turn off the oven, then leave inside to cool for around 20 minutes. Remove from oven and allow to cool totally.
3 Peel and chop the avocados. Top the bread with the avocado slices, feta and basil leaves Drizzle with oil and season to taste with salt and freshly ground pepper before serving.
