2 x 250g Irish Rump steaks
400g of mixed wild mushrooms
2 duck eggs
25g of butter
50g of finely chopped shallot
Good pinch of parsley
1 clove of garlic finely chopped
Splash of olive oil

2. In the same pan that you fried your steaks, heat a small amount of olive oil and start to fry the shallots, garlic and wild mushrooms over a medium heat for 3-4 minutes until cooked then add the nob of butter and chopped parsley.
3. In a clean pan with a splash of oil gently fry your duck egg to your liking.
4. Thinly slice your steak and neatly assemble on a plate with you mushrooms and duck egg.
