Apricot and Walnut Rum Truffles

You will need

300g dark chocolate
100g butter, softened
3 tbsp cocoa + 4 tbsp for dusting
50g dried apricots
50g California walnuts, finely chopped
4 tbsp rum


1. Grate chocolate and mix with butter until combined. Add 3tbsp of the cocoa powder, the apricots, walnuts and rum, and mix until it forms a sticky mixture which holds together. 

2. Sprinkle a large plate with the remaining cocoa powder. 

3. Take one tablespoon of mixture between the palms of your hands and roll into a ball, then coat with cocoa. Repeat until all the mixture has been used. Leave to cool in the refrigerator for at least four hours.
