Speedy Mexican Jacket Potatoes

Serves:

You will need

2 x 100g cans Princes Tuna Fillers - Mexican
2 large baking potatoes, scrubbed
Mixed salad leaves, cucumber and cherry tomatoes, to serve



Directions

1 Prick the potatoes, then microwave on full power for 6-7 minutes. Turn over and microwave on full power for a further 6-7 minutes. Check that the potatoes are tender – if not, microwave for a further 1-2 minutes, or until done.

2 Split the cooked potatoes and place on serving plates. Spoon one can of Mexican Tuna Fillers into each potato.

3 Serve, garnished with the salad leaves, cucumber and tomatoes.

Cook’s tip:

- If cooking one potato at once, microwaving time will decrease by 4-5 minutes.

- To oven bake the potatoes, preheat the oven to 200°C, fan oven 180°C, Gas Mark 6. Prick the potatoes, then bake for approximately 1 hour, or until tender.
