Six cocktails to try this Bank Holiday

The Bank Holiday weekend is upon us!

Why not toast in the arrival of the long weekend by enjoying a delicious cocktail?

Blackberry Mint Mojito

Serves: 2

You will need

20 blackberries
160ml water
4tsp sugar
12 whole mint leaves plus extra to serve
The juice of one lime
100ml white rum
Ice, for shaking
A splash of soda water

Directions

1 Put the blackberries, water, sugar, mint and lime in a cocktail shaker and mash with the end of a rolling pin. 

2 Add the rum and some ice and shake well.

3 Put the extra mint leaves and some ice into a glass and sieve in the cocktail adding a splash of soda water. Garnish with lime wedges, mint and blackberries by scattering on the cocktail.

Gin, Lime & Cucumber Cooler

You will need

50ml London Dry Gin
6 slices Cucumber, peeled
1/2 fresh Lime, cut into 2 wedges
40ml Del Rivo Apple Juice
12 fresh Mint leaves
1 tsp The Pantry Granulated Sugar
Crushed ice cubes 

Directions

1 Pour the gin and apple juice into a large cup or small bowl. Add the sugar, squeeze in the lime juice.

2 Add the mint leaves and the cucumber slices and, with the end of a wooden spoon, muddle/crush the mint and cucumber slightly to release their flavours. Pour into a glass, add plenty of crushed ice, drop in the lime halves and stir.

3 Serve garnished with a sprig of mint.

Bubbly Bellini

You will need

Chateau de Chanteloup Cremant de Loire
Savanna Peach Schnapps
Iceland Peach Sorbet Lollies

Directions

1 Mash up peach sorbet lollies to make a slush.

2 Mix in a shot of peach schnapps.

3 Pour the mix into the first third of a champagne flute.

4 Gently fill the glass to the top with Cremant and serve.

5 Garnish with a peach.

Pimm's Pritz

You will need

50ml Pimm's
75ml lemonade
25ml Prosecco
Cucumber
Mint

Directions

1 Fill your favourite wine glass with ice.

2 Pour 50ml of Pimm's.

3 Follow with 75ml of lemonade.

4 Top up with a 25ml splash of Prosecco.

5 Garnish with cucumber and mint to your taste.

Cucumber, Lemon and Fennel Flower Gin

You will need

1 litre gin

1 cucumber (sliced into ribbons)

Zest of two lemons, plus more for decorating

Cloudy lemonade

Fennel flowers

Directions

1 Put all the ingredients except the cloudy lemonade together into one jug, carafe or bottle. Cover and leave to infuse for at least two hours, but ideally overnight.

2 Place some ice into your chosen glass, pour over a measure of gin and top up with lemonade. Garnish with a swirl of lemon zest and a scattering of fennel flowers.

Sangria Portuguesa

You will need

Rabo de Gallo (or any Portuguese red wine)

Brandy

Iceland Sangria Mix

Pure Smooth Orange Juice

Directions

1 Fill a large pitcher with ice and all the liquids.

2 Add the fruit mix and stir well with a spoon.

3 Let it sit for at least 15 minutes to chill.

4 For the best results, leave it in the fridge for between four to eight hours so the fruit can fully absorb the mix.

5 Garnish with a slice of lemon.
