Baked Mushrooms

Serves: 15 appetisers

You will need

75g Boursin (1/2 packed)
15 mushrooms
½ red pepper
½ courgette
1 twig rosemary
2 tablespoon olive oil



Directions

1 Preheat the oven to 180 degrees.

2 Grease a baking dish.

For the filling:

1 Cut the pepper into cubes as small as possible.

2 Cut the courgette lengthwise into 4 pieces and cut out the soft core, then cut into small cubes.

3 Cut the rosemary leaves as finely as possible and mix with the vegetables.

4 Fry the vegetables in olive oil in a frying pan for approximately 3 minutes.

5 Flavour with pepper and salt.

6 Place the mushroom with the stem end up on a baking dish.

7 Fill the mushrooms with the filling and crumble Boursin on it.

8 Place the mushrooms in the oven for 15 minutes until they are done and the Boursin is browned.
